Lauren and I have a little garden out on our deck, with some planters that hang on the guardrails and a few on the floor. We've been growing herbs, peppers, and tomatoes, with the long-term goal of making some salsa with the produce. After a few months of waiting and a sabotage incident involving a squirrel who can't handle peppers, we succeeded!
The recipe is pretty simple, but it's damn tasty:
- 1 medium onion
- 2 jalapeno peppers
- 1/2 cup cilantro
- 6 medium tomatoes (about 1-1.5 lbs)
- 1 lime
- 3/4 tsp salt
Finely chop the tomatoes, onion, cilantro, and peppers. Combine in a large bowl with the juice of the lime, stir, and salt to taste. Let the salsa sit for a half hour and serve.
It's getting a bit cold for the tomatoes now, and we probably won't be able to keep our garden going much longer. Regardless, I'm hoping to keep making salsa regularly - it's just so tasty, and good to have on hand.
